If you’re looking for a truly unique culinary adventure that delightfully assaults the senses, cocktail expert Georgette Moger has a fascinating Parisian bespoke oyster experience she brought from New York City for guests to explore.

“Having worked as a writer for over a decade, across journalism and brand work in beauty and travel, I slowly found myself wanting to create experiences rather than just document them,” Moger told Bonjour Paris.

“Regarding Oysters became a way to bring storytelling off the page and into something people could actually taste, touch, and remember.”

From New York to Paris!

Originally established in 2020 in her Belle Époque-inspired townhouse, Moger taught guests how to create elevated cocktails from the pages of her bestselling drinks memoir she wrote for her late husband, renowned bartender Sasha Petraske, Regarding Cocktails.

“I started at the height of the pandemic; my work as a beauty copywriter and travel writer had vanished almost overnight, and like everyone else, I was missing the small rituals of being together — happy hour, conversation, the simple act of gathering,” she acknowledged.

“At the same time, oyster farmers were struggling. A friend of mine, Meg Dowe, an oyster farmer who owns Yennicott Oysters, taught me aquaculture and how to shuck, and I became quietly obsessed. There’s something deeply satisfying about it —precise, a little dangerous, and unexpectedly elegant.”

Moger began hosting small salon-style evenings in her apartment.

“Guests learned how to make unfussy, beautiful cocktails and to shuck oysters themselves. It felt like creating a pocket of warmth in a strange moment in time.”

After five years, and over 5000 paying guests in her living room, Moger moved to the city that inspired her salon concept – Paris. Now operating in her own cozy salon in the 11th arrondissement, she offers guests her salon experience, Regarding Oysters, both en suite and on the Seine as a pop-up picnic with shucking and tastings.

“Bringing ‘Regarding Oysters’ to Paris has felt like the story finding its natural home,” she enthused.

A Magical Evening

The memorable sip and shuck experience unfolds in Moger’s home in the 11th arrondissement.

“The space is designed as a modern salon: a clawfoot tub as a focal point, rooms that feel like living libraries, herbs growing wherever they can find light. It’s intimate, slightly theatrical, and very much lived in,” she noted.

Moger sources oysters from Marché d’Aligre, (in the 12th arrondissement) which she describes as “one of the most vibrant markets” in Paris, and pairs them with edible perfumes created by a collaborator in the south of France.

“The salon comes alive in the evening — candlelight reflecting off a high-gloss ceiling, layered textiles, small details that feel both considered and a little bit indulgent.”

A special welcome cocktail, the house martini, and other surprises are offered throughout the night.

“I serve the house martini, the Attabuoy – the cleanest dirty martini! – a 2:1 ratio of Cornichon-infused Citadelle gin to dry vermouth, finished with a drizzle of oyster liquor (the water in the shell), and a cornichon buoy, speared with a pearl-tipped toothpick.”

Alternatively, Moger also offers clients an outdoor encounter: a curated picnic along the Seine at sunset.

“For the Seine Experience, I send my guests the coordinates of where to meet me, and I have set up a gorgeous picnic for them to enjoy. We begin with a toast of champagne, and I do more of a wine pairing experience in this format.”

Whether they engage in the indoor or outdoor activity, Moger hopes that everyone attending her elevated oyster experiences has an exquisite time.

“One of the luxuries of Paris is spontaneity — I can often accommodate bookings with relatively little notice, thanks to the city’s extraordinary markets and daily access to exceptional ingredients. I want everyone to feel as though they’ve stumbled into something fleeting — an evening that couldn’t quite be replicated elsewhere!”

She added: “Of course, they learn to shuck oysters and understand merroir, but more than that, I would love to see them leave with a sense of confidence, a new ritual, and a deeper appreciation for the quiet generosity of French hospitality.”
