Café Shin: Insanely Good Kimbap and Cookies
There’s a cool new coffee shop on the block, and it’s a good bet for a healthy, quick lunch in the 10th arrondissement. Café Shin is a collaboration between Cheffe Shin Eun Jung and Julien Sebbag, the entrepreneurial chef behind a host of trendy hot spots in Paris, including Créatures on the Galeries Lafayette rooftop, and Forest at the Museum of Modern Art of Paris. This collab is a new kind of coffeeshop, one that reflects Shin’s Korean origins.
There was a line out the door when we dropped by recently. Light floods the space through floor-to-ceiling glass windows. There’s bar seating near the open kitchen, and a pretty room tucked in the back. If you need a caffeine fix, there’s a nice selection of craft coffee, from the flat white to the iced latte. You’ll also find specialty drinks including the goguma latte (made with sweet potato), the heukimja latte (with black sesame cream), the dalgona latte (with a creamy coffee emulsion), and the matcha latte (with or without espresso).
Similar to sushi, kimbap is made with cooked rice and fillings, wrapped in dried seaweed, and sliced into pieces that are easy to eat on the go. Options at Café Shin, priced around 9 euros, include tuna seasoned with Gochujang (red chili paste), and chicken with Doenjang (a type of Korean miso).
Save room for the croffle, a croissant waffle served with ice cream. (Pictured here with a matcha-flavored scoop.) Among the homemade sweets and pâtisseries, there’s also a divine matcha fondant, and cookies packed with flavor.
