Flaxseed Crackers Ingredients:250 gr (1 1/2 cups) unbleached white flour2 tBsp 150 ml (5 oz) cold water5 gr (1 tBso) ground flaxseed 7 gr (1 1/2 tBsp) flaxseed.1/2 tsp unrefined sea salt plus extra for sprinklingOlive oil for brushing top of crackers Preparation: Combine the flour, olive oil, water, poppy seeds, ground pepper and a generous pinch of sea salt in a bowl. Pour out onto a floured surface and knead for 10 minutes until dough is smooth and elastic. (You can let the Kitchen Aid do the kneading with the dough hook, in which event for only 4-5 minutes). Form dough into a ball, wrap in a kitchen towel and set aside to rest for 2-3 hours. Preheat oven to 350˚ F. Lightly oil a cookie sheet with extra-virgin olive oil. Knead dough lightly, cut into two or three pieces, depending on the size of your baking sheet; it’s better to use a thick baking sheet—I use a Pyrex glass baking sheet. While working with one piece keep the others wrapped in the towel.   Roll out the dough until very thin (no more than 1/16 inch) to fit the length and width of the sheet. Carefully lay it out across the oiled baking sheet and cut into 1 3/4 inch squares—a pizza cutter works wonderful for this.   Don’t displace the squares. Brush the top of them with extra-virgin olive oil and lightly sprinkle with salt. Prick each square twice with a fork.   Cook in the oven for about 15 min, or until just browning at edges. Check after first 5 minutes to make sure none of the crackers are billowing. If they are, prick them again with a fork. When done, slide them off the baking sheet onto a towel to let cool. Repeat the procedure with the rest of the dough. Note: You can use poppy seeds in the place of flaxseeds. In which event, add 10 gr (2-3 tBsp) poppy seeds and 1/2 tsp freshly ground pepper.
