When I’m in France, I always visit grocery stores. In the refrigerated section, you can find various pre-made taboulé and couscous dishes. Here’s one you can make at home.
INGREDIENTS:
- 1 cup bulgar
- 2 Tablespoons pistou / pesto (pre-made) or make your own
- 4 tomatoes, seeds removed and diced
- 4 scallions, sliced
- juice of 1 lemon
PREPARATION:
1. Rinse the bulgar in a colander. Place in a large bowl.
2. Bring a cup of water to a boil and pour over the bulgar. Let the bulgar set at least 30 minutes to sweel and become soft.
3. There shouldn’t be any water remaining but if there is drain it off. Mix in the pistou/pesto, chopped tomatoes, and scallions. Mix.
4. Add the lemon juice, toss and serve.
