The Champagne Region

I've been reading more about the champagne region and want to hear from others what are some of their favorite things to do there!!!
We took a tour from Paris and stopped at a few places including Dom Perignon's resting place and a cooperative of growers that bottled their own Champagne. It was very interesting. After these stops we went to Reims, toured the Catherdral and Marc Chagall paintings on the windows. After that we toured G. H. Mumm's Champagne house and caves. The whole trip was very interesting and our driver got us back to Paris at 6PM on schedule

You could always stop at the church where Dom Perignon is buried or visit the American WWI memorial at Chateau Thierry
Does anyone have any new and special ideas?? We're always hoping and looking .....

"Other than the usual tour of the Champagne houses, the cathedral, and a meal at Boyer Les Crayeres (all of which I've researched), I'm not finding anythinng new about a Reims spree.

Any suggestions? . . something along
the lines of champagne gaining/losing its prestige with travelers,
perhaps a crop of young champagne makers, new chefs or food pairings,
changes in the way of life at Reims, changes in the grapes.


Please come to my resue.
