Another interesting ethnic aspect of the French restaurant business in the USA is than many years ago almost all French restaurants were owned and staffed by Bretons. In those days the waiters were called garçons and you could bet they came from Brittany.

they came in Paris and there is now a strong community.

(Now some of their business tend to be bought by Chinese, but the historical bistro in Paris has the Aveyron culture.)
